As reported in Politico recently, the atmosphere is literally changing the food we eat, for the worse. And almost nobody is paying attention.

As a farmer's daughter, I know that agriculture research proves many of our most important foods have been getting less nutritious. Measurements of fruits and vegetables show that their minerals, vitamin and protein content has measurably dropped over the past 50 to 70 years. In 2004, a landmark study of fruits and vegetables found that everything from protein to calcium, iron and vitamin C had declined significantly since 1950. And now we know that nutrition is linked to rising CO2.

Scientists around the world are raising red flags about this. Marion Nestle, a nutrition policy professor at New York University who's one of the best-known nutrition experts in the world, initially expressed skepticism but after reviewing the evidence, she changed her tune. "I'm convinced," she said.

Kristie Ebi, a researcher at the University of Washington who's studied the intersection of climate change and global health for two decades, is one of a handful of scientists in the U.S. who is keyed into the potentially sweeping consequences of the CO2-nutrition dynamic, and brings it up in every talk she gives.

"It's a hidden issue," Ebi said. "The fact that my bread doesn't have the micronutrients it did 20 years ago―how would you know?"

Irakli Loladze is a mathematician by training, but he was in a biology lab in 1998, at Arizona State University, when he discovered something mysterious about zooplankton.

Loladze went on to prove what's called "the junk-food effect", which appears to be occurring in fields and forests around the world.
